I consistently use viper-mode in slime because it's pretty flippin'
fast to do stuff much of the time.  Well the problem is it is vi (not
vim), and dagnabbit that does only keeps track of your last available
undo - I want all undos!    Is there a way to get viper-mode to use
vim rather than vi or is it some sort of built-in thing with emacs
that I can't touch?

viper-mode in emacs does not _use_ vi, except in a very loose sense in 
what it _emulates_ vi.

Viper suports multiple undo (see the "Viper Startup Message") when you 
start viper-mode.
